As the weather gets colder, we all crave a hearty, delicious meal. So what could be more comforting than a big bowl of soup to keep you warm this winter?

Creamy artichoke soup 

Ingredients

2 tbsp organic ghee 

2 cups (300g) diced brown onion

3 tsp garlic (about 2 cloves)

1 cup (100g) chopped cauliflower florets

4 cups vegetable broth or (chicken bone broth optional)

240g jar artichokes (drained) 

1 tbsp B inspired botanicals green blend

Freshly ground black pepper 

1/2 tsp Himalayan salt

1 lemon wedge – to serve

1 tbsp fresh chopped coriander – to serve

Instructions
In a large saucepan, heat oil over medium heat and sauté the onions and garlic for about 5 minutes until the onions are soft. Add the cauliflower and sauté for another few minute. Stir often. Add the vegetable broth, artichokes, salt and cook over medium heat until the cauliflower is just tender. Pour the soup into your blender or use a stick blender & puree on high until the soup is smooth and creamy. Return the soup to the saucepan and warm the soup over low heat. To serve, ladle the soup into bowls and garnish with freshly ground pepper, coriander and lemon juice to taste.* Optional – Drizzle with help oil

Cauliflower soup 

Ingredients 

2 tbsp organic ghee

1 medium leek sliced thinly  

2 large cloves of garlic, finely chopped

1 cup (100g) chopped cauliflower florets

400ml can of coconut milk

 4 cups vegetable stock or (chicken bone broth optional)

2 tbsp of nutritional yeast

1 tbsp B inspired botanicals green blend

1 tbsp Arrowroot flour 

Freshly ground black pepper – to taste

Handful fresh dill chopped – to serve

Instructions
In a large saucepan, heat oil over medium heat and sauté the leek, onions and garlic for about 5 minutes until the leek & onions are soft. Add the cauliflower and sauté for another few minute. Stir often. Add your coconut milk, stock, nutritional yeast and cook over medium heat until your cauliflower is just tender. Into a small cup add your arrowroot powder and around 1/4 cup of water.  Stir till well combined and slowly add to the soup mixture, stir well to avoid any lumps. Pour the soup into your blender or use a stick blender & puree on high until the soup is smooth and creamy. Return the soup to the saucepan and warm the soup over low heat. To serve, ladle the soup into bowls and garnish with freshly ground pepper & dill. Season to taste

Beetroot & ginger soup

Ingredients

2 tbsp organic ghee

2 brown onions diced

3 cloves garlic chopped

2 tbsp ginger root finely chopped

3 medium beetroot peeled and quartered 

2 celery sticks chopped

4 cups of vegetable stock or (chicken bone broth optional)

1 tbsp B inspired botanicals green blend

270 ml coconut milk

Freshly ground black pepper – to taste

1/2 tsp Himalayan salt 

Handful chopped mint – to serve

Instructions                                                                                                                                    In a large saucepan, heat oil over medium heat and sauté the celery, onions and garlic for about 5 minutes until the celery and onions onions are soft. Add the beetroot, salt, stock and cook over medium heat until the beetroot is tender. Pour the soup and chopped ginger into your blender or use a stick blender & puree on high until the soup is smooth and creamy. Return the soup to the saucepan and warm the soup over low heat. To serve, ladle the soup into bowls and garnish with freshly ground pepper and chopped mint. Season to taste.
